Black Bean Stew with Thanksgiving Flavor
(main Thanksgiving dish for vegetarians)

2 carrots, 2 parsnips, fennel root (optional), spices - red chili pepper, cumin, kelp, , sage, thyme, lemon, dry krlp, any fresh herb, bell pepper and olive oil
Gravy from Celery Root
One celery root, one big or two small onions, one can organic coconut milk, juice from roasted turkey or organic chicken broth, black pepper
Quinoa Stuffing
2 cups of quinoa (soak overnight), onion, small box of crimini mushrooms, one carrot, hot pepper (optional)

Mushed sweet potato
2 lbs small sweet potatoes or yams preferably organic, butter, ginger root, lemon
Optional - a bunch of swiss chard

Green beans, one carrot, lemon, olive oil, sesame seeds optional

Organic mixed baby greens, cucumber, red or green bell pepper, tomato, olives or marinated artichoke, olive oil
